One of our lovely customers shared this fantastic recipe with us, and we just had to pass it on! These Lamb Chumps are coated in a crispy Parmesan and Panko crumb, making them beautifully golden on the outside and tender on the inside. Give it a try and let us know what you think!
Ingredients:
- 2 Lamb Chumps
- ½ cup plain flour
- 1 egg, beaten
- 1 cup Panko breadcrumbs
- ¼ cup grated Parmesan cheese
- 1 tbsp fresh parsley, finely chopped
- Salt & pepper, to taste
- Skewers (optional, for more even cooking)
Method:
- Prepare the coating – In one bowl, add the flour. In another, beat the egg. In a third bowl, mix the Panko breadcrumbs, grated Parmesan, and chopped parsley.
- Coat the lamb – Lightly season the lamb chumps with salt and pepper. Dredge each piece in flour, dip into the beaten egg, and then coat thoroughly in the Panko-Parmesan mixture.
- Cook to perfection – Heat a pan over medium heat with a little oil. If you prefer your meat more cooked through, insert skewers before cooking to help distribute the heat. Fry for a few minutes on each side until golden brown and crispy.
- Rest & Serve – Allow the lamb to rest for a couple of minutes before serving. Enjoy with your favourite sides!
